1.Heat a splash of oil in a heavy pan to medium high (not smoking)
2. Dry outside of steak with paper towel or newspaper to get excess blood of if necessary
3. Throw steak in pan, shake pan
4. When the bottom has a good brown sear, flip it. The second side will cook faster
5. After cooking remove steak and let it rest 5 minutes
6. While steak is resting, throw seasoning in the now empty pan, garlic, rosemary, pepper, whatever.
7. Pretty much straight away add 1/8 cup of cooking wine to the pan, which will clean the pan, make the sauce. Simmer the alcohol off while the steak is resting. You can add corn starch mixed with water to make the sauce more like a pub gravy but then it will need another minute.
8. The steak being rested you can then cut it up and add the sauce, which will keep the steak warm.
