Hoe cakes
1.5 cups cornmeal     1.25 cups boiling water
1 tablespoon sugar    2 X
.25 cup oil           .5 teaspoon salt

bring water to rapid boil in a kettle large enough to use in mixing hoe cake

Mix salt and sugar with cornmeal

Add all at once to boiling water. 

Stir until it gathers into one mass and leaves the side of the pan, remove from fire

Add oil and beat vigorously. add unbeaten eggs one at a time and beat hard after each addition.

The secret of making hoe cakes work is to beat them, Hence the name Hoe cakes.

cook at 200 degrees c for 30 minutes.
