Buy vegetable when there's a season for it (some sure to work vegetables are cucumbers, red peppers, cabbage, chinese cabbage and tomatoes but be sure to cut them cause tomato skin seems resistant to fermentation).
Pickle the vegetable in brine, horseradish and garlic.
Eat straight away or pasteurise the vegetable in jars together with fermented brine.
