yeah, in fact your pic shows a over the top moments from Pinkie and the little sequences of Pinkie being depressed serve to set up all the failures and make them comical.

the overreaction comes because of her motif. I think that when the reasons behind her anger are not that effective, then it carries some weight and could make it less enjoyable. They wanted to bring this side again and they tried to fit in with the yaks. It went with a pretty good pacing though, the rhythm didn´t feel forced.

yeah, they could have put a couple of details out there behind but I think this episode is more of seeing the actions than explaining them. When you make it too subtle or too focused on her expressions, these questions happen.

and that´s alright. In fact, if you watched the whole Pinkie-Yak experience (PP,NAFT,YS) in order, you would have a pretty nice slice of life arc to watch. The episodes themselves don´t offer much but they are there in the background to fill it and even feel immersed in that dynamic of jokes and serious business. 
It´s more like people get bored of the yaks easily but you don´t feel bad watching these episodes. I did like Not Asking For Trouble as well (and it´s considered a low point for season 7) but enjoying little slice of life episodes these days, it seems that you lower the standards/writing quality in the fandom´s eyes for asking that.

much like the rest of the yak episodes. The 6/10 rating was the most popular choice for the poll even though it had a great number of 1 rating, meaning that it will be remembered as a very low point for this season just behind Non Compete Clause if you take the average. 

But like the movie reviews in Rotten Tomatoes, if you are capable to enjoy something that others can´t(bonus points if it has logical reasons), then that´s fine. In fact, having a variety of opinions is also encouraged in order to learn something else.
