Chef Andrew Gruel @ChefGruel - Don't stress, those dark lines aren’t spoilage. They’re oxidation of myoglobin (see previous post - that's the oxygen storing protein in muscle). A few days in the fridge and parts of the meat lose that bright red and turn brown/gray, especially where it touches metal. Color change doesn't mean it's bad. Smell and texture, however, tell the story. As long as it's not smelly and slimy, you're good. If it is, keep it in your glove compartment, it will be good by summer.
