The situation was not as dire as I initially thought. 

Made a gringo ass cheviche with the vinegar from the jalapeno jar and a quarter of a red onion, black and gold lime juice. 
Cooked the beans with onion, spice, Chipotle, a marginal amount of tomato pasta sauce I was going to throw away. 
Cooked the pepper and onion with garlic and rice with tumeric. Had trouble with this because I forgot the multi cooker works on weight so you can't start rice with other shit in the pot on the default setting.
