Got 4x 100 litre heavy-duty storage tubs and a scrubbing brush from Bunnings for $81.
Got a 6 pack of 500ml DAB (Dortmunder Actien Brauerei) beers and a bottle of Cab Sauv. Girl on the checkout's first day. Guy overseeing her introduced us to each other for some reason.

Sirloin please, but tbh don't know much about steak. I want to get good at cooking steak. I just buy aldi shit, season the pan with rosemary, pepper, salt and chilli flakes and mix a bit of beef stock and red wine together while it's cooking. It tastes good but I know I could do so much better. I need a cooking thermometer.

My advice would be to cook the steak in only oil, then when the cooked steak is resting to add the seasoning to the pan to cook off the wine. 

How long to cook the steak depends on many factors but always cook it on a medium high heat and aim to flip it only once. 

Adding the wine on top of the steak is something you would only do if you were going to cassoulet the steak for two hours. With meat it has to be one way or the other, either sear it so it doesn't toughen, or stew it until it softens again. So you would never add liquid to a seared steak, it would toughen straighter away.

In the process of the steak, when does the wine come in? A bit confused, can you briefly write a step by step about what order to do it? I want to give it a shot you way.

1.Heat a splash of oil in a heavy pan to medium high (not smoking)
2. Dry outside of steak with paper towel or newspaper to get excess blood of if necessary
3. Throw steak in pan, shake pan
4. When the bottom has a good brown sear, flip it. The second side will cook faster
5. After cooking remove steak and let it rest 5 minutes
6. While steak is resting, throw seasoning in the now empty pan, garlic, rosemary, pepper, whatever.
7. Pretty much straight away add 1/8 cup of cooking wine to the pan, which will clean the pan, make the sauce. Simmer the alcohol off while the steak is resting. You can add corn starch mixed with water to make the sauce more like a pub gravy but then it will need another minute. 
8. The steak being rested you can then cut it up and add the sauce, which will keep the steak warm.
